A Korean taco is a fusion format from Los Angeles, most famously Roy Choi's Kogi truck in 2008: Korean barbecue meat such as bulgogi, spicy pork or short rib on a corn tortilla with kimchi, a slaw and a chile-soy or sriracha crema.
