A lengua taco is beef tongue, simmered for hours with onion, garlic and bay until fork-tender, then peeled, diced and lightly griddled onto a corn tortilla with onion, cilantro and salsa. It does not taste like what people expect: slow-cooked, it is soft, buttery and beefy, closer to pot roast
