How to spot good vegetarian tacos

  • Most taquerias will build a vegetarian taco from what is already on the line, such as beans, nopales, rajas, potato or mushrooms, even when it is not on the board. Ask.
  • Check the beans. Frijoles refritos are often cooked with lard, so ask if that matters to you.
  • Nopales (cactus) and rajas con crema (roasted chile strips) are the two most reliable traditional options.
  • Grilled mushroom and squash blossom (flor de calabaza) tacos are worth ordering wherever you see them.

What Are Vegetarian Tacos?
