Suadero vs Lengua

Suadero tacos are beef confit in fat on a domed comal, then chopped; lengua tacos are beef tongue simmered until tender, peeled, then chopped and griddled. Same corn tortilla, different meat and different technique, so they taste and eat nothing alike. Order suadero when you want onion and a richer bite, lengua when you want the lighter one.

The difference is the filling: Suadero uses beef, Lengua uses beef tongue.

What is a lengua taco?

Beef tongue, simmered for hours with onion, garlic and bay until fork-tender, then peeled, diced and often lightly griddled before going on a corn tortilla with onion, cilantro and salsa. The texture is soft and rich, closer to pot roast than most people expect.

Does lengua taste like tongue?

It does not taste "organ-y". Slow-cooked, it tastes like a very tender, beefy braise: mild and buttery. Most people cannot identify it blind.
