Nine Regional Taco Styles Worth Knowing

Taco is not one thing. It changes by region the way barbecue does in the US. Knowing roughly where a style comes from tells you what to expect on the plate and how to order it. Here are nine that show up most on US menus, from Jalisco's birria to the Texas breakfast taco.

1. Birria, Jalisco

Goat, or beef in the US, slow-stewed in a dried-chile adobo until it shreds, served with consomme for dipping and, increasingly, cheese griddled into the tortilla as quesabirria. A special-occasion dish turned street food via Tijuana.

2. Al pastor, Mexico City

Pork marinated in chile and achiote, stacked on a vertical trompo, shaved to order, finished with pineapple. Descended from Lebanese shawarma. The drier, redder northern version is adobada.

3. Carnitas, Michoacan

Pork confit-simmered in its own fat with citrus and spices until parts turn crispy and parts stay soft. Ordered as a surtida, a mix of textures. A weekend tradition.

4. Barbacoa, central Mexico and South Texas

In central Mexico, lamb wrapped in maguey leaves and pit-cooked overnight. In South Texas, often cow's head (cabeza) steamed until it falls apart. Either way, weekend mornings only, served until it runs out.

5. Carne asada, northern Mexico

Beef, usually skirt or flap, grilled hot over mesquite or a flat-top, chopped, and served simply with guacamole, onion and a roasted salsa. Often on flour tortillas in Sonora and Chihuahua.

6. Baja fish tacos, Ensenada

Firm white fish in a light beer batter, fried, dressed with a thinned crema, shredded cabbage and a lime-forward salsa. The grilled (a la plancha) version is the lighter cousin.

7. Tijuana street tacos

Small doubled corn tortillas, adobada off the trompo or mesquite-grilled asada, meat plus onion and cilantro, everything else at the salsa bar. Fast, cheap, and the template most US street tacos copy.

8. Cochinita pibil, Yucatan

Pork marinated in achiote and sour orange, wrapped in banana leaf, and slow-roasted until tender, then topped with pickled red onion. Deep red, tangy, and unlike anything else on this list.

9. The breakfast taco, Texas

A flour tortilla with egg and one or two add-ins: bacon, potato, chorizo, bean, cheese. An Austin and San Antonio institution with its own local rivalries. Order by the combination name if the board has them.

What is the most common taco style in the US?

Ground-beef Tex-Mex tacos are the most widespread by sheer count, but among taco-focused spots, birria, al pastor, carne asada and street-style tacos dominate the map.

Which style should a first-timer order?

Al pastor if there is a trompo, or birria if it is a weekend. Both are approachable, widely available, and show off what a kitchen can do.
